Rare & Pasture
Rare & Pasture is an award-winning charcuterie and smokery based on the farm at Fowlescombe. The team at Rare & Pasture use meat from our farm to create products that truly sustainable and delicious.
The collaboration between the farm and Rare & Pasture allows for truly exceptional charcuterie.
On the farm we raise rare and native breed animals using regenerative farming methods, so the animals mature slowly and naturally.
This produces meat of exceptional quality and with the particular characteristics needed for the best charcuterie – be that the right density of meat, the right fat content or meat from particular breeds of animal.
Rare & Pasture products include organic smoked sausages, shredded meats and lovely charcuterie products such as salamis and bresaola. Most are made from completely natural ingredients - free from artificial additives, flavour enhancers or fillers. Added nitrates are avoided, with only the lowest levels of nitrite used for organic production.
We’re particularly proud of our Fowlescombe Longhorn and Shorthorn Bresaola and our Fowlescombe Beef and Smoked Garlic Salami – both organic and Pasture for Life certified, of course, so full of healthy Omega 3 fatty acids.
